Spiced Chai Tea Loaf (vg)

Spice up the classic tea loaf with the warming flavours of cardamom, cinnamon, ginger and cloves.


300ml strong Nemi Organic Spicy Chai tea
350g dried fruit
250g self-raising flour
150g soft brown sugar
60ml sunflower oil


Brew the tea to the desired strength.

Pour tea onto the dried fruit and leave to steep until cool (the longer you can allow the fruit to steep the better as it will absorb more flavour, but if you're short on time then 30-45 minutes should be sufficient)

Pre-heat the oven to 150°C/300°F/Gas Mark 2.

Weigh out the flour and sugar into a mixing bowl, then add the soaked fruit and remaining tea. Add in the oil and mix with a spoon until it forms a batter. It should be a pourable consistency so if it needs to be a little looser then add a dash of milk (plant or nut milk to keep it vegan) and mix again.

Pour the batter into a loaf tin lined with baking paper, and smooth the top with back of the mixing spoon.

Bake in the oven for around 1 hour 15 minutes, or until the top is golden-brown and a skewer inserted into the cake comes out completely clean.

Allow to cool fully before slicing.
