Smoky Bacon and Sweet Potato Soup (vg)

It's officially soup season, and this silky soup is full of autumnal flavours to warm your cockles!


1 medium onion
1 medium carrot
1 medium sweet potato
1 litre hot vegetable stock
1 tsp smoked paprika
1 tsp ground cumin
1 tsp turmeric
1 tsp thyme or rosemary
4 tsp Notorious Nooch Co Smoky Bacon Nooch


Peel and chop the onion, carrot and sweet potato into small pieces. 

Heat a little oil and/or plant based butter in a lidded saucepan, then add the chopped vegetables.

Fry until softened, then add the paprika, turmeric and cumin and mix until well combined. 

Add the stock to the pan, bring to the boil and then reduce to a simmer.

Put the lid on the pan and leave for 20-25 minutes, until the vegetables are cooked through.

Use a stick blender to blitz until the soup is smooth.

Add the Notorious Nooch Co Smoky Bacon Nooch, and the thyme/rosemary, and blitz again. Check the taste and add a little more seasoning if required.

Serve piping hot, with chopped parsley and crispy fried onions as a garnish.
